Zucchini Fritters

This Zuuchini fritters are to die for! They have a crispy outside and a creamy interior that oozes cheese and the taste of zucchini. They taste buttery and are the best comfort food for the whole family, or just as a greek meze with a glass of wine and a few cherry tomatoes alongside with the tzatziki recipe below.

Ingredients for the fritters:
3 large grated zucchinis
1 small onion grated and strained
3 green onions chopped fine
3 tablespoons each of chopped parsley, and mint  
2 tablespoons chopped dill
About 100 grams feta
3 tablespoons of mascarpone
2 Tablespoons thick and creamy goat cheese
Salt and Pepper
Zest of one organic lemon without wax!

Frying ingredients:
Grapeseed oil for frying
Cornflour for coating

Grate the zucchini. Put it in a cheese cloth with a sprinkle of salt and squeeze until all water has been removed. 

Place it in a bowl along with the rest of your ingredients and mix slightly by hand until all ingredients are incorporated.make sure that you don’t melt or cream the cheeses. They should be chunky.

Shape the zucchini mixture into small individual balls. Coat them with cornflour and fry them in grapeseed oil until golden.

5 tablespoons of greek yogurt
1-2 tablespoons of olive oil
1-2 tablespoons of finely chopped dill
1.5 cloves garlic crushed
Salt pepper
1 tablespoon of white me vinegar

Place all ingredients in a bowl and gently mix with a spoon.
Serve alongside the fried zucchini fritters.
